Pudina/Mint Rice

Mint is one of the oldest and aromatic herb that is grown in around the world. I use it with Rice to enjoy the Minty flavour when fused with Rice .  

                  So... here is my Mint Rice 



Preparation Time : 30 min

Serves 4 people



Ingredients :





Washed Fresh Pudina/Mint leaves - 1/4 cup
Green chilli - 3
Peas - 3tbsp
Chopped Carrot - 2
Basmati Rice - 1 1/2 cup
Ginger - Garlic paste -1 tbsp
Chopped Onions - 2 (medium)
Wash and Peeled Ginger - 1"inch piece
Garlic Cloves - 5-6
1 black candamom
Cinnamon - 1" inch
Salt to taste
Shah Zeera/Caraway Seeds/Black Cumin Seeds- 1tbsp
Star Anise - 2 piececs
Bay Leaf
Grounded Cinnamon - 1tbsp
Oil - 4 tbsp
Water - 2 3/4 th cup




Preparation:



1. Wash and Soak Basmati rice in Water for 20min.


2. Grind Mint,Ginger,garlic,Green chillies into fine paste.


3. Heat oil /Ghee in cooker add cumin seeds,Cinnamon,cardamon,cloves,Star anise,Shajeera.Let it cook for 30sec.


4. Add Sliced Onions fry till they changes into transparent color add chopped vegetables,Green peas,Garam masala powder,Ginger - Garlic Paste,Cinnamon Powder.Saute for a minute.


5. Drain Rice from Water and Add to Cooker.along with Mint- Green chilli paste.With the help of Laddle Toss them  for 2min.


6. Add 2 3/4 cups of water to the Mixture.Close it and let it cook upto 4 whistles.


7. Turn Off the Flame Serve hot with Cashew nuts.






Tips: 


                                 Soak Green peas 1 hr before cooking.


       
               We can add Fried paneer to this dish.


          Its definitely a Different dish for those who got bored with Routine Rice...!!
